My grandfather is a diabetic and I want him to be able to enjoy dessert with the rest of us at Thanksgiving. Please give me your best desserts suitable for diabetics. (something other than just plain angelfood cake!)

I am not only a former chef , I am also a type 2 diabetic, and the sugar is not the biggest issues when considering a cake for a diabetic relative, carbs, fat and sugars are all critical, and I agree, we always have angel food cake at all my family gathering as I a, my mother and brother-in-law are all type 2, I would also look at chiffon cake a bit more tasty than angel food, sponge cake with a fruit and low calorie whipped cream, I use Dream Whip made with 1% milk, some cut strawberries, and marinade them in Splenda and orange juice, then fold together at service and top over the cake.
Dieter’s and Diabetics ar able to have some sugar it will not put them in a coma, but it should be reduced or replaced were possible, Low fat Cool Whip not fat free, jello with aspartame, even a Jello cake done wth sugar free jello, and topped with berry’s and Low fat CW is a nice dessert, and the other will enjoy it also.
i found this really good sounding recipe that is sugar free. the person that made this recipe has a husband that is diabetic and can have a little dessert like this without any problem. this cheese cake and the other recipe sounds good even for someone who is not diabetic i got the recipe from http://www.kraftfoods.com/kf/community/r…

Easy Sugar Free Cheesecake

Ingredients:
Crust:
1 1/4 cups graham cracker crumbs
1/4 cup Splenda
3 Tbsp. butter, melted
Filling:
8 oz. cream cheese
2 cups milk, divided
1 pkg. (.9 oz.) Jell-O Sugar Free Instant Lemon Flavor Pudding
Preparation Mix graham cracker crumbs together with Splenda, mix in melted butter and press into an 9″ pie pan.
Beat cream cheese until smooth. Add 1/2 cup milk mix until well blended. Stir in instant lemon pudding, add the remaining 1 1/2 cups milk and beat for 2 minutes.
Pour filling over crust and refrigerate at least 2 hours.

Mexican Chocolate Torte
(makes 16 servings)
what you’ll need…
6 large egg whites, at room temperature
1 cup (126 g) one-to-one sugar substitute such as Splenda®
1/2 cup (64 g) Kahlua-flavored instant powdered coffee beverage
1 1/2 teaspoons (7.5 ml) ground cinnamon
3 tablespoons (45 ml) boiling water
2 tablespoons (30 ml) Kahlua or additional boiling water
3 1/2 cups (840 ml) + 2 tablespoons (30 ml) skim milk
2 (6 serving) packages chocolate flavored fat-free sugar-free instant pudding mix
1 16-ounce (450 g) container frozen fat-free whipped topping, thawed
1 ounce (30 g) semisweet chocolate shavings
whole fresh strawberries or edible flowers (optional)

Preheat the oven to 225°F (107°C). Line 2 baking sheets with parchment paper and draw two 7-inch (17.5 cm) circles on each sheet.
Beat the egg whites until soft peaks form. Gradually add the sugar substitute and continue to beat until stiff peaks form. Divide the mixture evenly between the 4 circles and spread to cover the circles completely, forming 4 meringue layers.
Bake for 1 hour or until meringues are crisp and lightly golden. Turn the oven off and let meringues remain in the closed oven for another hour. Carefully transfer meringues to racks to cool completely.
In a large metal bowl, dissolve the coffee beverage and cinnamon in boiling water, stirring until completely dissolved. Stir in Kahlua, and milk. Whisk in pudding mix, beating for 2 to 3 minutes until thick and smooth. Fold in whipped topping.
To assemble, place a meringue layer on a large serving plate. Spread 1/3 of the pudding mixture over the meringue. Place a meringue layer on top and spread with the second third of the pudding mixture. Repeat with the remaining layers. Sprinkle top meringue layer with the chocolate shavings. Cover loosely with plastic wrap and refrigerate for at least 5 hours or overnight.
When ready to serve, if using, garnish top and the base of the torte with whole fresh strawberries or edible flowers. To serve, cut into wedges.

i am a diabetic and if you sub splenda or a sweetener that he likes use low fat or fat free ingredients. carbs 12 and under. sugars 8 or lower. you could make a splenda pumpkin pie. get a can of libbys just the regular canned pumkin there is fat free evaporated milk sub splenda for sugar. just put in the regular spices and egg beaters there are light ones that have less chol then reg eggs but i use reg eggs.
